Skewered Masala Prawns

By Sid • Jul 11th, 2007 • Category: Indian Food, Non Vegetarian Food

This is a really simple, probably non-traditional way of making very tasty prawns. Only one consideration here. Make sure you soak the bamboo skewers overnight in water to prevent them getting charred or scorched. You’ll need

Peeled, de-veined medium size prawns
Sesame oil
Meat masala [I told you it wasn't traditional]
Salt to taste
Lemons [cut each lemon into [...]

Definition: Sautéing and Stir-Frying

By Sid • Jul 10th, 2007 • Category: Posts

Sautéing: Sautéing is browning food first on one side and then on the other in a small quantity of fat or oil. When sautéing, which is a type of frying, the fat is placed in a shallow pan, and when it is sufficiently hot, the food is put into it. When cooking, the fat should [...]

Fried Chicken

By Sid • Jul 9th, 2007 • Category: Indian Food, Non Vegetarian Food

This isn’t yet another recipe for fried chicken, where you slather pieces of chicken in batter and deep fry, then eat with tomato ketchup. This is the definitive recipe for fried chicken that can possibly be described as the deep Indian version. As with most of my recipes, the listing is *not* for beginners and [...]

Definition: Braising and Broiling

By Sid • Jul 8th, 2007 • Category: Posts

Braising (from the French “braiser”) is cooking with “moist heat,” typically in a covered pot with a variable amount of liquid, resulting in a particular flavour.
Braising relies on heat, time, and moisture to successfully break down tough connective tissue and collagens in meat. It is an ideal way to cook tougher cuts. Many classic braised [...]

TGI Fridays, Connought Place

By Sid • Jul 7th, 2007 • Category: American Food, Desserts, Fast Food, Italian Food, Non Vegetarian Food, Restaurants in Delhi, Reviews, Snacks, Starters, Vegetarian Food

We decided to have a boys lunch out, so the father, brother and me planned to meet up at TGI Fridays, Connought Place.
First off, the music wasn’t at loud as I thought it would be, which is good. The artifacts style of decor I learnt, it on its way out - sad.
Anyhow, lets come to [...]

Nirulas No More

By Sid • Jul 6th, 2007 • Category: American Food, Desserts, Fast Food, Indian Food, Non Vegetarian Food, Posts, Restaurants In NOIDA, Restaurants in Delhi, Reviews, Snacks, Starters, Vegetarian Food

We decided to pop over to Nirulas in Sector 2 NOIDA on Friday evening. We have gradually been getting more and more disillusioned with the quality of *every* thing at Nirulas lately, but for ‘old times sake’ always give it another chance every once in 6 months or so. While the quality of service [...]
