Python Stew

No, I’ve never actually made this stew, at least not with python. Tried it with squid though and it wasn’t half bad. Try it out… if can find snakes, even better.

Skin the snake. Chop into pieces.
Dust lightly with seasoned flour [salt+pepper]
Put into a frying pan with palm oil
Separately, make a sauce of tomatoes, onions, shallots, [...]

Onion Pachadi

A simple dish that goes well with a traditional meal of dal, subzi and rotis or rice, this is refreshing and easy to make.
Peel and shred onions and fry in a little ghee. Add some chopped tomatoes, salt and coriander leaves to a bowl of curd. Add the onions. Season with some fried mustard seeds. [...]



Pickled Prawn Curry

Ok, so I’m stuck on prawns… but this *is* a nice curry. You’ll need:

2 heaped cups Fried prawns
20 dried chilies
4 small onions
4 tsp gingelly oil
2 tsp cumin seed
10 pods garlic
20ml vinegar
curry leaves
salt
turmeric powder

Method:

Clean and wash fresh prawns, de-vein.
Rub well with turmeric, a little vinagar and salt.
Fry till a crisp golden brown.

Nilgiri Kurma

Another interesting variation of a mutton korma. You’ll need:

500gms Mutton
3 Green chilies
3 pods garlic
15gms khus khus
225ml curd
30gm grated coconut
3 red chilies
1 tbsp coriander
10 small onions
30gms oil
fresh coriander leaves
1″ ginger
salt to taste

Method:

Wash, clean and cut mutton into pieces
Soak the meat in the curd for 30 minutes

Fried Shrimps / Crevettes Frites

The last of the ‘Prawn Week’ series, this is a simple and quick recipe that can be modified according to your needs.

Wash and drain the shrimp. Do not peel.
Fry in hot oil for about a minute.

Prawn and Cauliflour Curry

Third in the prawn series. You’ll need:

500gm peeled prawns
1 medium cauliflour
2 large onions
6 green chilies
1 tsp ginger paste
 2 tsp cumin seed
6 pepper corns
1 tsp turmeric
1 tsp chili powder
2 tbsp oil
salt to taste

Method:

 Wash prawns thoroughly
Cut cauliflower into florets.
Grind the onions, green chillies, cumin seed, pepper corns and red chillies into a paste

Prawn Pulao

Next in the prawn series, you’ll need:

1 cup peeled prawns
2 cups rice
5 tomatoes
6 green chilies
3 tbsp oil
1 inch ginger
1 whole garlic
2 onions
1 bunch coriander leaves
2 pieces patta
2 cloves
1 inch cinnamon
2 cardamoms
salt to taste

Method:

Heat oil and fry cinnamon, cloves, cardamom and chopped onions.
Add ground ginger and garlic. Fry some more.

Khutta [sour] Prawns

Ok! This week is hereby declared ‘Prawn Week’. Here’s the first recipe. You’ll need:

1 Onion
2 cup peeled medium prawns
1/2 tsp Turmeric [haldi]
1.5 tsp Coriander powder [dhania]
1 tsp chili powder
1 tsp jeera
1/4 tsp fenugreek
1/2 grated coconut
4 large tomatoes
1 tsp tamarind extract

Khaman Dhokla

You’ll need:

4 cups rice
1 cup channa dal
butter milk
Green chillies
Ginger
Garlic
Salt
Turmeric
Oil for frying

Method:

Soak the rice and dal for 12 hours.
Blend with butter milk
Add green chillies, ginger, garlic, salt, and turmeric (to taste) and steam cook
When thick and completely cooked, cut into pieces and fry in oil with mustard seeds
Garnish with grated coconut and coriander leaves
