Thai Coconut Milk Soup

This amazingly simple soup is nutritious and you can make it even more so by adding more vegetables. The base of the flavor is in the two key ingredients - galangal and lemon grass. Based on coconut milk, it can be a full meal in itself - just add noodles or serve on a bed of noodles.Making this is quite simple - simply simmer chopped vegetables, thinly sliced galangal and bruised lemon grass with seasoning in coconut milk. You’ll need to simmer it for a while to get the flavors of the galangal and lemon grass to permeate into the soup - when its done - divine!
Note: For the non-vegetarian version, just add some shredded boiled chicken to it, or raw, finely sliced chicken. |
