Aubergine with Garlic and Mushrooms

For some reason, Cherie has started disliking fried eggs which used to be her favorite. Interestingly, she couldn’t get enough of mushrooms in the past and now she can’t run far enough from them.
I completely forgot to cook lunch for Indu until she reminded me about it. Looking in the fridge I found some aubergine - the long, slim kind and a packet of large button mushrooms. Both were sliced along with some finely chopped shallots. The shallots were fried in a pan with some finely sliced garlic and the aubergine added soon after. A sprinkle of sea salt and oregano and they were removed from the pan and placed in the middle of a flat glass dish. Now for the mushrooms - they were sauteed in a little butter and then flavored with some good, strong English mustard, the teeniest bit of garlic, a splash of cream and some finely chopped chives. These were removed from the pan and went into the same glass dish, around the aubergine. A healthy grate of some mature cheddar and Indu’s lunch was done. I haven’t tasted it yet (all that cream and butter!), but Indu assures me it tastes fine and she’s looking forward to having it for lunch. - Sid PS: I forgot to mention the capers that were added to the aubergine. |

That sounds delicious. I’d have it without cream though, not fond of cream at all but I do love aubergines. Are you still cookig three meals a day?

Instead of cream, you could also try a dollop of salad cream, added post-heat. Yes, still cooking three meals a day. I think that breakfast (tea) sounds good and I’ll have to extend my resistance, so I’m able to stay with a cup of tea, while cooking proper breakfasts for Indu and Cherie.

I wonder why not? I haven’t turned it off or changed the number, the phone is fully charged and I have credit on there. You’ll just have to call the house number. I’ll e-mail it to you if you’ve mislaid it…
Not salad cream I fear - perhaps some mayonnaise. If you have the strength of character to just drink tea whilst cooking for your womenfolk you are to be commended!

@Toni: Why mayonnaise? (just curious). Today was a little better - toast and coffee, while the womenfolk ate this spicy egg concoction with buttered toast. Lets see how long this can be stretched.

Well, you suggested salad cream which I dislike, too much of a vinegar flavour. I’m wondering now, what kind of salad cream do you get there? We have Heinz and probably some others, I don’t look for it…
On the breakfast front, could you not have egg now and then on your toast? Or vegetables? How about mushrooms or aubergine? You don’t have to fry them and could spice them up. Just a thought, if you are hungry first thing in the morning…
Ok - I was thinking it was perhaps the calories or something else. Breakfast: Yes, but one thing usually leads to another and the next thing you know, its a full spread again. I’m wondering how Indu liked her lunch today - it was stuffed eggs.
