Cucumber Mutton Soup

This is an excellent dish that brings out all the flavor of your meat and combines the freshness of cucumber all in one hot, tasty bowl of soup. It’s simple to make, though it does take quite a while.
Just wash your mutton well and place in a pot of water with some black pepper, garlic, a bay leaf and a little salt. Keep it covered, on the lowest heat possible for 2 – 3 hours, adding a little liquid along the way if required.
When done, the meat should be falling off the bone. Discard the bones if you like and put back on the fire, tossing in a few slices of chopped cucumber, a dash of light soya sauce and a pinch of paprika. Bring to the boil and serve hot.
