Curried Tuna with Potatoes

I found these lovely, smooth skinned and firm potatoes at the vegetable market yesterday and thought up this recipe just to use them! I also found some onion stalks with the buds on. If you haven’t seen these, they look like spring onion stalks, only they’re thicker, firmer, totally hollow and quite long, with a bud at the top. The curried tuna is wonderfully spiced and goes perfectly with the gently seasoned potatoes. Its quite satisfying too. First! Find the loveliest, firmest and smoothest potatoes you can lay your hands on. Scrub them gently, slice in half lengthwise and toss into a pot of boiling water. Throw in a bit of turmeric powder, salt and a handful of fresh coriander. Boil till tender. In the meantime, steam some tuna and flake with a fork. Chop the onion stalks, one batch coarse and one batch fine. Slice some garlic finely. Find a pan, heat a little oil - toss in the garlic and coarsely chopped onion stalks, followed by curry powder When the tuna is just about done, melt a little butter in a pan along with the finely chopped onion stalks. Finally, put the potatoes on a plate, stack with the tuna and then pour the butter/onion mixture over it all. Believe me, it tastes good!

Slow down! I’m only as far a Pea Rice yet! I do have he next 4 days off from the office though, (because of Easter) so will eventually catch up…
Toni.
That sounds good! Shall definitely try it.
The photograph is great so I can almost smell the dish.
Sounds good, but for the tuna! It’s the one fish I dislike, but I’m guessing that any meaty fish would be good in the dish.
I’m interested that you cook the coriander so long, I was told to always add it at the end of cooking to keep the flavour. I’ll have to try that.
As you’ve probably made out by now - we’re all tuna addicts here and love it in every form - cooked or raw - we’ve even made a sashimi with it and eaten it raw.
Yes, I guess any meaty fish, well drained will do the job - BUT - it wont be tuna!!
This recipe is more attractable by others because every one like this potato.I think this gives more spicy and hot.We may eat with curd rice, or any fried rices etc……….Apart from potato we may use soya, califlower……….
