Sandwich Omelette

Sandwich Omelette

This is in continuation to my previous post on Spicy Minced Meat. That was the stuffing.

The Sandwich Omelette can probably be compared to the stuffed bun, but this one is easier and quicker. It has an outer covering of a thin omelette, inside which is are two slices of fresh white bread, inside which is the minced meat we made earlier and a slice of . It is quite , can be made quickly and filling too!

Make a filling of your choice. I chose minced meat. Stuff it in between two slices of white [or any other] bread along with a slice of . Reserve. Beat two eggs. You’ll need a really wide pan for this one, as the omelette has to be big enough to completely wrap around the slices of bread. Heat a little oil in it, pour in the eggs and them all around. Place the sandwich in the middle and the moment the omelette is firm enough to lift, lift it from each side and place on the bread. Press firmly. If the is a little raw on top - good. Do the same for all four sides then flip the whole thing over and let it cook on the bottom for a few seconds.

Remove from the pan and serve with ketchup. Try filling it with marmalade - really good! If you do, lightly salt the eggs.
