Semolina Halwa

We were at Swagatas house recently and found her making this for her daughter, niece and nephew.
Swagata is a Bharatanatayam dancer, choreographer, writer and more (see some photos here) a good friend who is also instructing my daughter in the art. Semolina or suji halwa is quite easy to make and tastes delicious when hot. First we dry roast some semolina and set aside. In a little ghee, lightly fry some crushed cashewnuts and a little green cardamom. Add the semolina and stir. Add some sugar (about 2/3 the amount of semolina), mix and then add water (equal to the amount of semolina). On medium heat, keep stirring till the water has evaporated. You could add a little saffron for color and flavor if you wish. Remember to crush the saffron in a little warm milk if you decide to use it. A few raisins taste good too. Garnish with some whole cashew nuts and serve hot. You could also serve puris with this. - Sid |

That sounds so much nicer than the stuff we had to eat at school. All I can recall is that it looked and tasted like wallpaper paste. I hated it so much that I have never even bought a pack of semolina in my entire life! :-0

Every body seems to have a different method for making Sooji Halwa. I make mine by roasting the sooji in ghee until it is light brown and then adding a syrup to it which is made with one part sugar and four parts water and boiled for five minutes only. The amount of sugar used should be the same as the amount of sooji used. Powdered cardamom and strands of saffron soaked in milk add a touch of romance to this humble dessert. Of course you could load it with dry fruit to further enhance its value.

I love sooji halwa. We always make it when I’m studying for exams. We throw a few eggs, cardamom, and milk in though. So good with puri.
