Two Mushroom Stir Fry

This is a simple, quick and stir fry that you can whip up in minutes. It uses two [or more if you like] types of - button and wood ear mushrooms. Here’s what you do:

Soak the wood ear in hot stock. You’ll need to replenish the stock from time to time because they swell up to 4 times their size. Chop the button , and lightly saute in , , white pepper and light soya . When done, take out the and reserve the liquid. Next, toss the wood ears with chilli , sesame seeds and light soya . Thicken the left over liquid from the button with a little cornflour and toss chopped in it.

Finally arrange on a platter and serve hot.

  1. Sounds delicious, not sure we’d get wood ear mushrooms here though.  What is the red in your picture?

  2. Does taste rather good. You could also use shiitake mushrooms and toss the whole lot together.

We get two varieties of carrots - Red [traditional indian] and orange - which are the same as what you get in the UK. The red in the photo are the red carrots, chopped.

I’m sure you’ll get wood ear fungus there. I know of a shop in Chesterfield called ‘Denlita’, which is a speciality Asian store. I’m guessing there should be something similar in your city too.

  3. Those red carrots look so much better than the boring orange ones we have here.  There are many Asian stores just a mile away from my home, I shall have to go looking and enquiring.
I’d heard of Denlita! Though I haven’t been to Chesterfield in years!
Home-time in a minute, must  have a half hour snooze before I do anything else tonight…

  4. I’m not sure about the red carrots, but I’m sure you’ll get wood ear fungus there. I believe it should be one of the staples of east asian cooking.

The weekend is here - what are you going to do? :)

  5. Probably looking for dried fungi!  Other than that, the waether is not going to be very nice so perhaps I’ll just read or sleep…
How about you? Have you anything planned?

  6. I have some friends dropping by to spend the weekend at my place. These chaps are from another region in India and their food is totally different. So we usually yakk in the kitchen over a drink while cooking something up.

  7. I hope you’ll be sharing what you cook with us?  Enjoy the company.
