Our Third Day in France

We a woke to sunshine and I wore my summer clothes.  We had breakfast of fried eggs and mushrooms on  toasted sunflower bread, it was lovely.  French eggs all seem to have very yellow yolks and they are always delicious.  We read a little in the sunshine but soon had to have a little snooze…

Asparagus à la flamande

Asperges à  la flamande, is a simple recipe, which can serve well as a side dish or accompaniment to a main course.
Method:

Boil water, add and mix salt in it
Add asparagus and cook
Remove asparagus from water
Add eggs to water. Hard boil.
Remove eggs from water. Peel.
Extract yolk and set whites aside for later use [elsewhere]
